Hello everyone, Today I'm going to show you how to make the créole Mont-Blanc cake. It's a traditional sponge cake from French West Indies (Guadeloupe, Martinique...) puffed with coconut cream. I've put my vegan touch here: the pastry cream is made with rice cream so no need to have all this butter, milk and flour. Very light and flavour rich. It's a caribbean speciality :). If you try a whole vegan mont-blanc, use the technique to make vegan sponge cake because for this one only the pastry cream is vegan. You'll need to double the measurements.
