America's Test Kitchen testing senior editor Lisa McManus explains what to look for when buying a pressure cooker, and reveals which models performed best in our testings. America's Test Kitchen is a real 2,500 square foot test kitchen located just outside of Boston that is home to more than three dozen full-time cooks and product testers. Our mission is simple: to develop the absolute best recipes for all of your favorite foods. To do this, we test each recipe 30, 40, sometimes as many as 70 times, until we arrive at the combination of ingredients, technique, temperature, cooking time, and equipment that yields the best, most-foolproof recipe. Each week, the cast of America's Test Kitchen brings the recipes, testings, and tastings from Cook's Illustrated magazine to life on our public television series. When are you going to do a rice cooker video?

Presto IMO makes the Best Pressure cooker, Mine was handed down to me from my mother 20 years ago and she had it for 30 years before that, 10 years before I was born. My wife bought a 22 Qt. pressure cooker from Presto for canning 3 months ago and it is the same quality as the one my Mother gave me. Very heavy gauge stainless steel and the seals are easy to find if you ever need to replace them. They aren't cheap the 22 Qt. I believe was just over 200 USD. But it will last a life time and then some they are the Lamborghini of pressure cooking.

Uh oh.... I've been called out at 1:46.... THAT was a funny line....

Thank you for the useful tips.

Very Clear explanation of what is expected and what is NOT expected from a pressure cooker. another good aspect is, though this video reviews the pressure cookers available in American market, the principles explained applies to all pressure cookers available in other markets. Thanks

INDUCTION COMPATABILITY QUESTION: Given the popularity and widespread use of induction tops these days, not indicating whether or not each model is in fact compatible with an induction top seems like a glaring omission, because as you experienced not all steel clad aluminum core cookies are created equal, and compatability hinges on the thickness of said cladding. Easy enough to test with a magnet, and a double check against manufacturer documentation. Can someone please do so, and post an update to the review ? Thanks in advance.
DISK WIDTH ERROR: BTW, you correctly point out that the Fissler has a FULL width disk at 3:13, but then you incorrectly indicate that the Fagor has one too at 3:33 when it clearly DOES NOT. Perhaps you were saying it was broader than most of the others, and that was enough to score the number two spot ? -
But the best buy the "Fagor Duo" doesn't have a full width disk and straight sides like the winner the "FISSLER VITAQUICK"... which is highly desirable as you pointed out...

Thanks this was very helpful!

is it necessary to vent a pressure cooker before placing the weight on?

What about the Electric Pressure Cookers? You never reviewed those...
-
Power pressure cooker? Remember those ads?
-
You didn't talk about canning in the pressure cookers or talk about the electric versions at all!!
-
LOVE this show. Thank you guys for doing this.

Thank you for this great review! I'm considering either your first pick the Fissler VitaQuick or this new one by All-Clad that has others raving about it. What do you think of the new All-Clad PC8 Precision Stainless Steel Pressure Cooker Cookware in 8.4-Quart?

I have the Fagor duo 10qt pressure cooker. This is the larger version. Do not buy the larger version. It burns EVERY time I cook in it. It has a boatload of evaporation. I spend 20min+ using steel wool to clean it every time. I am very unhappy. While I have always lived by ATK advice. I will agree to disagree on the Fagor brand. Fagor has awful/non-existent customer service. I agree with the tips on this video.
